​​At our olive groves in Chianti, Tuscany, we have just finished the new harvest in autumn.

Our 2016 Olio Nuovo is made with the best olives hand-picked over a few days. We start the harvest as early as October so that our new olive oil has a bright green colour and a signature spicy, fruity and peppery flavour.

By adopting early harvesting and only using natural production methods, we are able to obtain a very limited quantity of olive oil, with the best possible quality and the highest concentration of antioxidants and polyphenols. 

Pure, unaltered olive oil is a fruit juice. Fresher is better.

PREMIUM SINGLE ESTATE OLIO NUOVO - 2016 HARVEST

​​Product Information

Olio nuovo (new oil) is the extra virgin olive oil freshly pressed from olives from the new harvest. It is most highly-prized for its fresh, fruity, peppery flavours and high concentration of antioxidants and polyphenols. The new, unfiltered oil has a cloudy appearance due to the tiny particles of olive suspended in the oil.

This olive oil is produced using olives from the Pietre al Monte estate. Our olive groves are located at an altitude of 500 meters in Valdarno, in the heart of Tuscany between Chianti and Pratomagno.
​

This piece of land has been cultivated by generations of farmers, growing several varieties of olive trees native to the region. The terroir and history of the land is expressed in the unique taste of the olive oil.

Cultivar and Characteristics
Each vintage of olive oil has unique characteristics, tastes and fragrances depending on the harvest. Due to the use of natural farming methods, the climate and other environmental variables have a direct impact on the olive fruits harvested each autumn.

The harvest from the Pietre al Monte estate is mainly of the Leccino and Frantoio cultivars. The typical oil is dark green in colour, and has a delicately balanced taste of green olive, fresh herbs and tomato.
